Maya’s 1st Birthday Party

Today Maya had her 1st Birthday Party! She was so sweet and adorable . . . like always!
The party went great. It was kind of a last minute decision to have the party this weekend instead of next, but almost everyone found this weekend more convenient, so it worked out well. My mother kept Wyatt overnight last night so I could get everything ready for the party. That was such a good idea! Allain helped me chop fruits and veggies last night and finish some housework. Then I baked Maya’s 1st bday cake!
It was a homemade carrot cake (made in an angel food cake pan), which turned out really nice. I made the cream cheese icing (tofu cream cheese of course!) this morning and then decorated the cake.
Decorating with cream cheese icing is not actually very easy! It sort of melts down the sides of the cake, so I had to just go with the flow, and make it look ok. I coloured some of the icing pink, some purple, and some yellow. I drizzled the pink and purple around like flower petals and put yellow in the center of the flower. It turned out pretty nice, but I didn’t end up taking a very good picture of it.
- Carrot Cake Recipe
- 2 cups flour (I did half whole wheat / half white)
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp baking soda
- 3/4 tsp salt
- 1/2 tsp nutmeg
- 3/4 cup each granulated and packed brown sugar
- 3 eggs (I used egg replacer)
- 3/4 cup vegetable oil
- 1 tsp vanilla
- 2 cups grated carrots
- 1 cup drained canned crushed pineapple
* mix dry ingredients together
* cream sugars with wet ingredients
* mix wet and dry together till just moist
* stir in carrot and pineapple
* pour in pan and bake in 350 F oven for about 40 min
Everyone seemed to like the results and Maya loved her first cake!
We were hoping to spend the party outside, but it turned out pretty yucky most of the morning and early afternoon (the party was from 10am till around 2pm) and didn’t start to clear up till after everyone had left! Even though we were all crammed in the house, it was still pretty nice. Everyone started arriving at about 10am, and we ended up with a lot of little babes running around.
There was Maya and Wyatt, along with their cousin Owen (2.5 yrs), my friend Gen’s little boy Logan (almost 2 I think), my cousin Andrea’s boys Henry (2.5 yrs) and Reese (7 months), and my ex-neighbors little girl Savannah (14 months). Even with all the little ones running around everyone said it was so quiet and calm. All the kids were sooo well behaved. There was no screaming or yelling or temper tantrums at all (Amazing for 7 party-ers under 3!).
We had munchies and watched the kids play, then Maya opened her birthday presents. She got the most beautiful gifts! I’m going to do another post with some pictures of the individual gifts. A lot of them were beautifully handmade. The kids played some more (they played so well together) then everyone had cake! Maya loved her mommy’s cake efforts and scarfed it down, yay!
It turned out to be a great party and I think everyone really enjoyed themselves (I hope). Thanks again to everyone who came, you made my baby girl’s 1st birthday celebration great!
